Giovanni Rana’s sea bass recipe is a vibrant feast for fish-lovers, topped with a zesty homemade lemon infused olive oil, fresh parsley and samphire.
Place a pan over a medium heat with olive oil and the spring onions. Sauté the tomatoes until soft.
Add the Giovanni Rana Simply Italian Tomato and Basil Sauce, stock and samphire.
Cook until the tomato and vegetables are tender. Keep on a low heat so the sauce remains warm while you prep the rest of the dish.
Lemon Infused Olive Oil
Grate the zest of 1 lemon. Add 200ml of oil, 20g chopped parsley and then mix.
Leave to rest for 20 minutes.
Sear fish in sauté pan in hot oil skin side down. Cook until tender but not dry.
Spoon vegetables and sauce into your serving dish, then place the fish on top. Top with the lemon infused olive oil.
