Tomato Tagliatelle

Serves 2

  • 400g fresh tomatoes 

  • 1 clove of garlic

  • 50ml extra virgin olive oil

  • Parmigiano Reggiano, grated

  • Basil leaves

Tomato Sauce
  1. Prepare a fresh tomato sauce by cooking the fresh tomatoes, garlic, olive oil and basil leaves for 10 mins on a medium heat.

  2. Cook the pasta in boiling water for 2 mins, adding salt to the pan.

  3. Strain the pasta, add the tomato sauce and top with grated Parmigiano Reggiano. Add a garnish of fresh basil leaves and serve.
