The way of cooking in Italy differs quite a bit when it comes to marinating, the fundamental process in boosting flavour. A typical Italian marinade uses less sauce and more raw ingredients. Chicken can be simply coated with a light layer of extra virgin olive oil and rubbed with salt and pepper before taking to the flames as opposed to being doused in an overly rich sauce.
The process of cooking the meat can be vastly different, too. As opposed to gas cooking, Italians prefer grilling their food over a wood fire, as they’re believed to infuse a smokier taste. Lamb and pork chops are a popular choice to add to the grill. These cuts of meat would be garnished with parsley, rosemary and thyme, with a squeeze of lemon juice prior to cooking keeping the meat tender on the heat.
